What clients don't see on the plate

"Food photography should be taken within minutes once it is ready on table for the shoot. After that, the steam is gone, the herbs have wilted, the ice has started to weep into the sauce. My job is to have the plate, the light and the camera already agreed with each other before the food ever arrives, so when it lands, I'm shooting — not setting up. The rest is assured. Yummy looking images in your hand that prompt the customer to instantly order!"

Racing the Clock

Ice cream sits for minutes, not hours. Grill char cools, sauces skin over, and garnish that looked bright at plating looks tired within a scene change. In professional food photography, freshness isn't styled in after the fact — the whole set is pre-lit and pre-focused on a stand-in before the real dish leaves the kitchen, so the actual plate is only in front of the lens for as long as it needs to be.

Angle Decides the Detail

A saffron rice needs the camera looking almost straight down, so the grains and peas read as texture instead of a blur. A stacked burger or a glazed chicken needs a lower, 30–45° angle to show height and glaze. Getting this wrong is the fastest way to make a great dish look flat — angle, before lighting, is what tells the viewer what kind of food they're looking at.

Colour That Matches the Kitchen

Most hotel kitchens mix warm tungsten pass lighting with cool daylight from the pass window — and both land on the plate at once. Getting true-to-plate colour means custom white-balancing on site, dish by dish, so the tomato in the photo is the same red the guest sees on the table. It's the least visible part of the job, and the part clients notice first if it's wrong.
